Louisiana Jambalaya over a Campfire
This hearty and flavorful Louisiana Jambalaya is perfect for cooking over a campfire. It's a great dish to enjoy with friends and family while camping.
Ingredients
- 1 lb chicken breast, diced
- 1 lb andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 2 cups long-grain rice
- 1 can diced tomatoes
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Heat the olive oil in a large cast-iron pot over the campfire.
2. Add the diced chicken and cook until browned.
3. Add the sliced andouille sausage and cook until browned.
4. Add the diced onion, green bell pepper, and minced garlic. Cook until the vegetables are tender.
5. Stir in the Cajun seasoning, salt, and pepper.
6. Add the rice and cook for a few minutes, stirring constantly.
7. Pour in the chicken broth and diced tomatoes. Bring to a boil.
8. Reduce the heat and let it simmer for about 20 minutes, or until the rice is cooked.
9. Add the shrimp and cook for another 5 minutes, or until the shrimp are pink and cooked through.
10. Serve hot and enjoy your campfire jambalaya!
